Pineapple Upside-Down Poundcake Bites
Ingredients
For the Pineapple Glaze:
cup pineapple juice from canned pineapples
cup brown sugar
2 tablespoons unsalted butter
For the Poundcake Bites:
1 cups all-purpose flour
1 teaspoon baking powder
teaspoon salt
cup unsalted butter, softened
1 cup granulated sugar
2 large eggs
1 teaspoon vanilla extract
cup sour cream
cup pineapple juice
For Assembly:
12-15 maraschino cherries, halved
Pineapple chunks or tidbits drained
For the Icing Drizzle:
1 cup powdered sugar
2 tablespoons pineapple juice
Instructions
1. Prepare the Pineapple Glaze:
In a small saucepan, combine pineapple juice, brown sugar, and butter.
Cook over medium heat until the sugar has dissolved and the mixture is slightly thickened about 3-4 minutes.
Remove from heat and let it cool slightly.
2. Make the Poundcake Batter:
Preheat the oven to 350F 175C. Grease a mini muffin tin or mini bundt cake pan.
In a medium bowl, whisk together the flour, baking powder, and salt.
In a large bowl, beat the butter and sugar until light and fluffy. Add the eggs one at a time, mixing well after each addition.
Stir in the vanilla extract, sour cream, and pineapple juice.
Gradually add the dry ingredients to the wet ingredients, mixing just until combined.
3. Assemble the Bites:
Place a small amount of pineapple glaze in the bottom of each muffin or mini bundt cavity.
Add half a maraschino cherry cut side up and a small piece of pineapple chunk.
Spoon the poundcake batter over the pineapple and cherry, filling each cavity about full.
4. Bake:
Bake for 12-15 minutes or until a toothpick inserted into the center comes out clean.
Let the bites cool in the pan for 5 minutes, then gently invert onto a wire rack to release the cakes.
5. Add the Pineapple Drizzle:
Whisk together powdered sugar and pineapple juice until smooth.
Drizzle the icing over the cooled bites for added sweetness.

Ensure the pineapple and cherries are drained well to prevent excess moisture.
Store in an airtight container for up to 3 days.
