Cherry-Chocolate Delight Cake
Ingredients:
– 1 cup all-purpose flour
– 2 cups fresh cherries, pitted and halved
– 1/2 cup unsweetened cocoa powder
– 1 cup sugar
– 1/2 cup butter, softened
– 3 eggs
– 1 teaspoon vanilla extract
– 1 teaspoon baking powder
– 1/4 teaspoon salt
– 1/2 cup milk
– 1 cup chocolate chips
Instructions:
1. Preheat your oven to 350F 175C. Grease and flour a 9-inch round cake pan.
2. In a large mixing bowl, cream together the softened butter and sugar until fluffy.
3. Add the eggs, one at a time, mixing well after each addition. Stir in the vanilla extract.
4. In another bowl, sift together the flour, cocoa powder, baking powder, and salt.
5. Gradually add the dry ingredients to the wet mixture, alternating with the milk. Mix until just combined.
6. Gently fold in the halved cherries and chocolate chips, being careful not to overmix.
7. Pour the batter into the prepared cake pan. Smooth the top with a spatula.
8. Bake in the preheated oven for about 30-35 minutes or until a toothpick inserted in the center comes out clean.
9. Allow the cake to cool in the pan for 10 minutes, then turn it out onto a wire rack to cool completely.
