Hearty Pork Rib Soup with Corn

Hearty Pork Rib Soup with Corn & Mushrooms

Ingredients:

– Pork ribs

– Fresh corn kernels

– Sliced mushrooms

– Onion, chopped

– Garlic, minced

– Carrots, diced

– Celery, chopped

– Chicken broth

– Bay leaves

– Salt and pepper to taste

– Olive oil

– Fresh parsley for garnish

Instructions:

1. Start by prepping your ingredients! Chop the onion, mince the garlic, and dice the carrots and celery.

2. In a large pot, heat a drizzle of olive oil over medium heat. Add the pork ribs and sear them until they are nicely browned on all sides. This should take about 5-7 minutes.

3. Once the ribs are done, remove them from the pot and set aside. Add the chopped onion, garlic, carrots, and celery to the pot, sautéing until they are tender, approximately 5 minutes.

4. Return the pork ribs to the pot. Pour in the chicken broth, adding enough to cover the ribs. Toss in the bay leaves, salt, and pepper, and bring to a boil.

5. Once the soup is boiling, reduce the heat to low, cover, and let it simmer for about 1 hour, allowing the flavors to meld beautifully.

6. After an hour, stir in the fresh corn kernels and sliced mushrooms, cooking for an additional 20 minutes until the mushrooms are tender.

7. Taste and adjust the seasoning as necessary. Remove the bay leaves before serving.

8. Serve hot, garnished with fresh parsley for a pop of color and flavor.
