Decadent Red Velvet Strawberry Cheesecake
Ingredients:
– 1 1/2 cups crushed graham crackers
– 2 cups cream cheese, softened
– 3/4 cup granulated sugar
– 1 cup heavy cream
– 1/2 cup unsweetened cocoa powder
– 1/2 cup buttermilk
– 2 cups fresh strawberries, sliced
– 2 large eggs
– 1/4 cup vegetable oil
– 1 tablespoon vanilla extract
– 1 tablespoon red food coloring
– 1/4 teaspoon salt
– 1 teaspoon baking powder
Instructions:
1. Preheat your oven to 325F 160C. Grease a 9-inch springform pan.
2. In a bowl, mix the crushed graham crackers with 1/4 cup of sugar and 1/4 cup melted butter. Press this mixture into the bottom of the springform pan to form the crust. Bake for about 10 minutes and let it cool.
3. In a large mixing bowl, combine the cream cheese and remaining sugar until smooth. Add in the eggs one at a time, mixing well after each addition.
4. Incorporate the vegetable oil, vanilla extract, buttermilk, cocoa powder, red food coloring, salt, and baking powder. Blend until everything is evenly mixed.
5. Gradually fold in the heavy cream until just combined.
6. Pour the red velvet cheesecake batter into the cooled crust. Bake for 50-60 minutes or until the center is set but still slightly jiggly.
7. Once baked, let the cheesecake cool to room temperature, then refrigerate for at least 4 hours or overnight for best results.
8. Before serving, layer the fresh sliced strawberries on top for that perfect finishing touch.
