Savoury Pancakes with Ham and Cheese

Ingredients:

150g flour

1 teaspoon baking powder

2 eggs

200ml milk

1 pinch of salt

2 tablespoons melted butter plus a little for cooking


4 slices of ham

100g grated cheese Emmental, Cheddar, or other melted cheese

Preparation:

Preparation of the pancake batter: In a bowl, mix the flour, yeast and salt. Gradually add the eggs and milk while whisking to avoid lumps. Incorporate the melted butter and mix well until you obtain a smooth batter.

Cooking the pancakes: Heat a frying pan with a little butter. Pour a small ladle of batter into the pan to form a pancake. Cook until bubbles appear on the surface, then turn the pancake over.

Adding the ham and cheese: As soon as the pancake is flipped, add a slice of ham and a handful of grated cheese on half of the cooked surface. Cover with a second pancake or fold over if you prefer. Let the cheese melt.

Serve: Repeat with the remaining batter, ham and cheese. Serve hot, accompanied by a green salad or a sauce for a complete dish.
