Biscoff Cookie Butter Cheesecake
This Biscoff Cookie Butter Cheesecake is a rich, ultra-creamy dessert with a spiced cookie crust, velvety cookie butter filling, and decadent toppings of whipped cookie butter cream, crushed Biscoff cookies, and a luscious caramel drizzle!
Ingredients:
For the Crust:
2 cups Biscoff cookie crumbs
cup brown sugar
cup melted butter
For the Cheesecake Filling:
24 oz cream cheese, softened
1 cup granulated sugar
cup Biscoff cookie butter
3 large eggs
cup sour cream
1 tsp vanilla extract
For the Cookie Butter Whipped Cream:
1 cup heavy cream
2 tbsp Biscoff cookie butter
2 tbsp powdered sugar
For the Garnish:
Crushed Biscoff cookies
Whole Biscoff cookies
Caramel drizzle
Instructions:
1 Prepare the Crust:
Preheat oven to 325F 163C.
Mix Biscoff cookie crumbs, brown sugar, and melted butter.
Press into the bottom of a 9-inch springform pan.
Bake for 10 minutes and let cool.
2 Make the Cheesecake Filling:
Beat cream cheese and sugar until smooth.
Add cookie butter, eggs one at a time, sour cream, and vanilla.
Pour into the cooled crust and smooth the top.
3 Bake the Cheesecake:
Place the cheesecake in a water bath wrap the pan in foil and place in a larger pan with hot water.
Bake for 50-55 minutes, or until the center is set.
Let cool in the oven with the door cracked for 1 hour, then chill for 4 hours.
4 Make the Whipped Topping:
Whip heavy cream, cookie butter, and powdered sugar until fluffy.
5 Assemble:
Pipe whipped topping onto the cheesecake.
Garnish with crushed and whole Biscoff cookies.
Drizzle with caramel sauce.
