Seafood Cioppino
Ingredients:
For the broth:

For the seafood:
1 lb mussels, cleaned and debearded1 lb clams, scrubbed1/2 lb large shrimp, peeled and deveined1/2 lb white fish like cod, halibut, or sea bass, cut into chunks1/2 lb calamari rings optionalFresh parsley, chopped for garnish

Directions:
Sauté Aromatics:
Heat olive oil in a large pot over medium heat. Add the onion and fennel, cooking until softened, about 5 minutes. Stir in the garlic and red chili flakes, cooking for another 1-2 minutes until fragrant.
Deglaze with Wine:
Pour in the white wine, scraping the bottom of the pot to release any browned bits. Simmer for 2-3 minutes until slightly reduced.
Build the Broth:
Stir in the crushed tomatoes, seafood stock, bay leaf, oregano, smoked paprika, salt, and pepper. Bring the mixture to a boil, then reduce the heat to low. Cover and simmer for 20-25 minutes to let the flavors meld.
Cook the Seafood:
Add the mussels and clams first, covering the pot and cooking for 5 minutes until they begin to open.Stir in the shrimp, fish, and calamari if using. Cover and cook for an additional 5-7 minutes, or until the shrimp is pink, the fish is opaque, and all the shellfish have opened. Discard any mussels or clams that remain closed.
Serve:
Ladle the cioppino into bowls, garnish with fresh parsley, and serve with crusty bread for dipping. Add a squeeze of fresh lemon juice if desired.
