Chilaquiles: A Flavorful Mexican Breakfast Delight!
Ingredients:
– 4 cups tortilla chips
– 2 cups green or red salsa
– 2 tbsp olive oil
– 2 eggs optional
– 1/2 cup crumbled queso fresco or shredded cheese
– 1/4 cup sour cream
– 1/4 cup chopped cilantro
– 1/4 cup chopped onion
– 1 avocado, sliced
– Salt and pepper to taste
Instructions:
1 Heat olive oil in a large skillet over medium heat. Pour in the salsa and simmer for 2-3 minutes until warmed through.
2 Add the tortilla chips to the skillet and stir to coat them evenly in the salsa. Cook for 3-5 minutes, allowing the chips to soften slightly while retaining some crunch.
3 If desired, fry two eggs in a separate pan to top the chilaquiles.
4 Remove from heat and sprinkle with queso fresco or shredded cheese, then add a dollop of sour cream.
5 Garnish with chopped cilantro, onions, avocado slices, and season with salt and pepper.
6 Serve immediately, preferably with the fried eggs on top for extra richness.
