Mexican Egg Bake: A Hearty and Flavorful Breakfast!
Ingredients:
– 6 large eggs
– 1 cup shredded cheese cheddar, Monterrey Jack, or a blend
– 1/2 cup salsa red or green
– 1/4 cup milk or cream
– 1/2 cup diced bell peppers
– 1/2 cup diced onion
– 1/2 cup cooked chorizo or ground beef optional
– 1/4 cup chopped cilantro
– Salt and pepper to taste
– 1/4 tsp cumin optional
– 1 tbsp olive oil
Instructions:
1 Preheat your oven to 375F 190C.
2 In a skillet, heat olive oil over medium heat. Sauté the bell peppers and onions for 5-7 minutes until softened. Add cooked chorizo or ground beef, if using, and cook for another 2-3 minutes.
3 In a bowl, whisk together eggs, milk or cream, salsa, cumin if using, salt, and pepper.
4 Add the sautéed vegetables and meat, if using into a greased baking dish. Pour the egg mixture over the top.
5 Sprinkle shredded cheese evenly on top of the egg mixture.
6 Bake for 20-25 minutes or until the eggs are set and lightly golden.
7 Garnish with fresh cilantro and serve with tortillas or a side of avocado.
