Black Bean Huevos Rancheros: A Flavor-Packed Mexican Classic!
Ingredients:
– 2 large eggs
– 1 cup black beans, cooked and mashed
– 2 corn tortillas
– 1/2 cup salsa red or green
– 1/4 cup crumbled queso fresco
– 1/4 cup chopped cilantro
– 1/4 cup sliced avocado
– 1/4 cup diced onions
– 1 tbsp olive oil
– 1 tsp cumin
– Salt and pepper to taste
Instructions:
1 In a small pan, heat olive oil over medium heat. Lightly fry the corn tortillas for about 1 minute per side until crispy but not too hard. Set aside.
2 In the same pan, crack the eggs and cook to your preferred doneness sunny-side-up is traditional. Season with salt, pepper, and cumin.
3 While the eggs cook, heat the black beans in a small pot over medium heat. Mash them slightly with a fork or potato masher and season with salt and pepper.
4 To assemble, place a fried tortilla on each plate. Spread a layer of mashed black beans on top.
5 Place a cooked egg on top of the beans. Spoon salsa over the egg and sprinkle with crumbled queso fresco.
6 Garnish with chopped cilantro, sliced avocado, and diced onions.
