Make-Ahead Breakfast Bars

Ingredients:

For the bars:

2 cups rolled oats1/2 cup whole wheat flour or almond flour for gluten-free1/4 cup ground flaxseed optional, for extra fiber1 tsp baking powder1/2 tsp cinnamon1/4 tsp salt1/2 cup peanut butter or almond butter1/3 cup honey or maple syrup2 large eggs1/4 cup milk dairy or plant-based1 tsp vanilla extract1/2 cup mix-ins e.g., chocolate chips, dried fruit, chopped nuts, or seeds

For optional toppings:

1 tbsp honey, drizzled2 tbsp shredded coconut or extra chocolate chips

Directions:

Preheat and prepare:

Preheat your oven to 350F 175C. Line an 8×8-inch square baking pan with parchment paper or grease lightly.

Mix the dry ingredients:

In a large bowl, combine rolled oats, flour, ground flaxseed if using, baking powder, cinnamon, and salt. Stir to mix evenly.

Prepare the wet ingredients:

In a medium bowl, whisk together peanut butter, honey, eggs, milk, and vanilla until smooth and creamy.


Combine the mixture:

Pour the wet ingredients into the dry ingredients and mix until well combined. Gently fold in your chosen mix-ins.

Bake the bars:

Spread the mixture evenly into the prepared pan. Smooth the top with a spatula. If adding toppings, sprinkle them over the top now.Bake for 20-25 minutes, or until the edges are golden and a toothpick inserted in the center comes out clean.

Cool and cut:
