Gnocchi
Ingredients:
2 lbs russet potatoes, peeled and boiled1 1/2 cups all-purpose flour1/2 cup grated Parmesan cheese1 large egg1/2 tsp salt1/4 tsp black pepper1 tbsp olive oil for cookingFresh basil or parsley for garnish optional
Instructions:
Mash the boiled potatoes until smooth and allow to cool slightly.On a clean surface, combine mashed potatoes, flour, Parmesan, egg, salt, and pepper. Mix until dough forms.Roll the dough into long ropes, then cut into small pieces, about 1 inch each.Use a fork to gently press into each piece to create the classic gnocchi shape.Bring a large pot of salted water to a boil. Drop the gnocchi in batches and cook for 2-3 minutes until they float to the surface.Remove with a slotted spoon and set aside.Heat olive oil in a pan over medium heat and sauté the gnocchi for 2-3 minutes until golden and crispy.Garnish with fresh herbs before serving.
