Moroccan Couscous

Ingredients:

2 cups couscous2 1/2 cups chicken or vegetable broth1/2 cup chickpeas, cooked1/2 cup raisins1/2 cup diced carrots1/2 cup zucchini, diced1/4 cup slivered almonds1/4 cup olive oil1 teaspoon ground cumin1 teaspoon ground cinnamon1/2 teaspoon turmericSalt and pepper to taste

Instructions:


Heat the broth in a medium saucepan until it comes to a boil.Stir in couscous, cover, and remove from heat. Let it sit for 5 minutes.In a skillet, heat olive oil and sauté carrots and zucchini until tender.Fluff the couscous with a fork, then mix in the chickpeas, raisins, sautéed vegetables, and spices. Adjust seasoning with salt and pepper.Top with slivered almonds before serving.
