Jersey Fresh Stewed Tomatoes
Ingredients:
6 large ripe tomatoes, peeled and chopped1 medium onion, chopped2 cloves garlic, minced2 tablespoons olive oil1 teaspoon dried basil1 teaspoon dried oregano1/4 teaspoon sugarSalt and pepper to taste1/4 cup fresh basil or parsley, chopped optional, for garnish
Instructions:
Heat olive oil in a large skillet over medium heat.Add the chopped onion and garlic and cook for 3-4 minutes, until softened.Stir in the chopped tomatoes, basil, oregano, sugar, salt, and pepper.Bring to a simmer, then reduce heat and cook for 20-25 minutes, stirring occasionally, until the tomatoes have broken down and the sauce thickens.Taste and adjust seasoning if necessary.Garnish with fresh basil or parsley before serving.
