Curry Pasta Salad
Ingredients:
2 cups cooked pasta rotini or elbow macaroni works well1/2 cup mayonnaise2 tbsp plain Greek yogurt2 tbsp curry powder1/4 cup chopped celery1/4 cup chopped red bell pepper1/4 cup raisins1/4 cup chopped green onions1 tbsp honey1 tbsp apple cider vinegarSalt and pepper to taste
Instructions:
In a large bowl, combine cooked pasta, celery, red bell pepper, raisins, and green onions.In a separate bowl, whisk together mayonnaise, Greek yogurt, curry powder, honey, apple cider vinegar, salt, and pepper.Pour the dressing over the pasta mixture and toss until everything is well coated.Refrigerate for at least 1 hour before serving to let the flavors develop.
