Ingredients

Bread:

1 3/4 cups all-purpose flour

1/4 teaspoon salt

1 teaspoon baking soda

1/2 teaspoon baking powder

1 teaspoon ground cloves

1 teaspoon ground cinnamon

1 teaspoon ground nutmeg

1 1/2 cups white sugar

1/2 cup butter, softened


2 eggs

1 cup canned pumpkin puree

1/2 cup flaked coconut

1/4 cup water

Optional:

1/2 cup chopped walnuts or pecans

Instructions

Preheat your oven to 350F 175C. Grease and flour a 9×5 inch loaf pan.

In a medium bowl, whisk together the flour, salt, baking soda, baking powder, cloves, cinnamon, and nutmeg.

In a large bowl, cream the sugar and butter until light and fluffy. Beat in the eggs one at a time, then mix in the pumpkin puree. Add the dry ingredients to the pumpkin mixture alternately with the water. Fold in the coconut and optional nuts.

Pour the batter into the prepared loaf pan. Bake in the preheated oven for 1 hour and 15 minutes, or until a toothpick inserted into the center of the loaf comes out clean.

Let the bread cool in the pan for 10 minutes, then turn out onto a wire rack to cool completely. Enjoy!
