Chicken Fried Chicken
Ingredients:
4 boneless, skinless chicken breasts
1 cup buttermilk
1 cup all-purpose flour
1/2 cup cornstarch
1 tsp garlic powder
1/2 tsp onion powder
1/2 tsp paprika
1/2 tsp salt
1/2 tsp black pepper
Oil for frying
For Cream Gravy:
2 tbsp unsalted butter
2 tbsp all-purpose flour
1 1/2 cups milk
Salt and pepper to taste
Instructions:
Pound chicken breasts to even thickness. Soak in buttermilk for 30 minutes.
In a bowl, mix flour, cornstarch, garlic powder, onion powder, paprika, salt, and pepper. Dredge chicken in the flour mixture, pressing firmly to coat.
Heat oil in a skillet over medium-high heat. Fry chicken for 3-4 minutes per side or until golden and cooked through. Remove and set aside.
For gravy, melt butter in a saucepan over medium heat. Whisk in flour and cook for 1 minute. Gradually whisk in milk until smooth. Cook until thickened, then season with salt and pepper.
Serve chicken hot, topped with cream gravy.
