Ingredients:

– 2 cups all-purpose flour

– 2 cups white sugar

– 2 large eggs

– 2 teaspoons baking soda

– 1 teaspoon vanilla extract

– 1 20 ounce can crushed pineapple with juice


– 1/2 cup chopped pecans

– 1 8 ounce package cream cheese, softened

– 1/2 cup butter, softened

– 4 cups confectioners sugar

– 1 teaspoon vanilla extract

– 1/2 cup chopped pecans for topping

Instructions:

Preheat your oven to 350F 175C. Grease and flour a 9×13-inch baking dish.

In a large bowl, combine flour, sugar, eggs, baking soda, and 1 teaspoon of vanilla. Mix in the can of crushed pineapple, including the juice. Stir until just combined, then fold in 1/2 cup of chopped pecans.

Pour the batter into the prepared baking dish. Bake for 40 minutes, or until a toothpick inserted into the center comes out clean. Allow the cake to cool completely in the pan.

While the cake cools, prepare the frosting. In a medium bowl, beat together the softened cream cheese, butter, confectioners sugar, and 1 teaspoon vanilla until smooth and creamy.

Once the cake is cool, spread the frosting evenly over the top. Sprinkle with the remaining 1/2 cup of chopped pecans.
