Total Time: 30 minutes
Servings: 4
Ingredients
2 tablespoons olive oil
1 pound large shrimp, peeled and deveined
1 teaspoon paprika
1 teaspoon garlic powder
Salt and pepper, to taste
1 cup diced onion
1 cup diced bell peppers red, yellow, or green
3 cloves garlic, minced
1 cup long-grain white rice
2 cups chicken broth
1 cup diced tomatoes
1 teaspoon dried thyme
1 teaspoon smoked paprika
Juice of 1 lemon
Fresh parsley, chopped, for garnish
Instructions
In a large skillet, heat the olive oil over medium heat.
Season the shrimp with paprika, garlic powder, salt, and pepper. Add the shrimp to the skillet and cook for 2-3 minutes on each side until they are pink and opaque. Remove the shrimp from the skillet and set aside.
In the same skillet, add the diced onion and bell peppers. Cook until softened, about 5 minutes.
Stir in the minced garlic and cook for another minute until fragrant.
Add the rice to the skillet, stirring well to coat it in the oil and vegetables.
Pour in the chicken broth, diced tomatoes, thyme, and smoked paprika. Bring to a boil, then reduce the heat to low. Cover the skillet and simmer for 15 minutes, or until the rice is tender and the liquid is absorbed.
Return the cooked shrimp to the skillet and squeeze the juice of one lemon over the top. Stir to combine and heat through.
Garnish with fresh parsley and serve hot.
Pro Tip
For an extra burst of flavor, try adding a splash of white wine to the skillet along with the broth, or sprinkle some grated Parmesan cheese on top just before serving. Its a simple way to elevate this dish even further!
