For the Crepes:

1 cup all-purpose flour

2 large eggs

1/2 cup milk

1/2 cup water

1/4 teaspoon salt

2 tablespoons melted butter

For the Cheesecake Filling:

8 oz cream cheese, softened

1/4 cup powdered sugar

1 teaspoon vanilla extract

1/2 cup heavy cream, whipped


For the Berry Topping:

1 cup mixed berries strawberries, blueberries, raspberries

2 tablespoons granulated sugar

1 tablespoon lemon juice

Instructions

For the Crepes:

In a large mixing bowl, whisk together the flour and eggs. Gradually add in the milk and water, stirring to combine. Add the salt and melted butter; beat until smooth.

Heat a lightly oiled non-stick skillet over medium-high heat. Pour or scoop the batter onto the skillet, using approximately 1/4 cup for each crepe. Tilt the pan in a circular motion so that the batter coats the surface evenly.

Cook the crepe for about 2 minutes, until the bottom is light brown. Loosen with a spatula, flip and cook the other side. Repeat with the remaining batter.

For the Cheesecake Filling:

In a medium bowl, beat the softened cream cheese, powdered sugar, and vanilla extract until smooth. Gently fold in the whipped cream until fully incorporated.

For the Berry Topping:

In a small bowl, combine the mixed berries, granulated sugar, and lemon juice. Let the berries macerate for about 10 minutes.

To Assemble:

Spread a generous amount of the cheesecake filling onto each crepe, then fold or roll them up.

Top with the berry mixture and an extra dollop of whipped cream if desired. Serve immediately and enjoy!
