1 15-ounce can chickpeas, drained
cup tahini
cup lemon juice
2 cloves garlic, minced
cup roasted red peppers
teaspoon dried basil
Salt and pepper to taste
Instructions
Prepare the ingredients: Drain the chickpeas, reserving a bit of the liquid in case you need to thin the hummus later. Mince the garlic cloves and set aside.
Blend the base: In a food processor, add the drained chickpeas, tahini, lemon juice, and minced garlic. Pulse the mixture several times, then blend continuously until it becomes smooth. Stop occasionally to scrape down the sides of the processor to ensure everything is well mixed.
Add roasted red peppers: Add the roasted red peppers and dried basil to the processor. Blend again until the peppers are well incorporated and the hummus has a creamy texture. If the mixture is too thick, slowly add a little of the reserved chickpea liquid or water to reach your desired consistency.
Season to taste: Add salt and pepper according to your preference. Blend one final time to ensure everything is combined.
Transfer and chill: Transfer the hummus to a bowl, cover, and let it chill in the fridge for at least 30 minutes to allow the flavors to meld together.
