Ingredients

2 cups white sugar

1 cup butter, softened

4 large eggs

3 cups all-purpose flour

2 cups fresh peaches, chopped

1 teaspoon vanilla extract

1 teaspoon baking powder

teaspoon salt

Instructions

Preheat the oven to 325F. Butter a 10-inch tube pan and coat with sugar for a sweet crust.

Beat sugar and butter with an electric mixer until light and fluffy. Add eggs one at a time, beating well after each addition.

Sift flour, baking powder, and salt together. Gradually mix into the butter mixture.

Coat chopped peaches with a bit of flour to prevent sinking, then fold them into the batter.

Pour the batter into the prepared pan and bake for 60-70 minutes, or until a toothpick comes out clean.

Cool for 10 minutes in the pan, then invert onto a wire rack to cool completely before serving.
