Ingredients
1 cup water
2 tablespoons white sugar
teaspoon salt
2 tablespoons vegetable oil
1 cup all-purpose flour
2 quarts vegetable oil for frying
cup white sugar for coating
1 teaspoon ground cinnamon

In a small saucepan, combine water, 2 tablespoons of sugar, salt, and vegetable oil. Bring to a boil, then remove from heat.
Stir in flour until the mixture forms a smooth dough.
Heat oil in a deep pan to 375F 190C.
Spoon the dough into a piping bag fitted with a large star tip. Pipe 4-inch strips of dough into the hot oil.
Fry churros until golden brown, about 2 minutes per side. Drain on paper towels.
In a small bowl, combine cup sugar and cinnamon. Roll the warm churros in the cinnamon sugar mixture before serving.
