Ingredients:
1 cups chocolate cookie crumbs
cup melted butter
3 250 g packages of chocolate cream cheese
cup white sugar
1 teaspoon peppermint extract
3 large eggs
cup whipping cream
1 tablespoon sugar
1 crushed candy cane for garnish

Instructions:
Preheat oven to 350F 175C. Mix cookie crumbs and melted butter, pressing into the bottom of a springform pan.
Beat cream cheese and sugar in a large bowl until blended. Add peppermint extract and eggs one at a time, then pour over the crust.
Bake for 4045 minutes, cool, and refrigerate for at least 4 hours.
Whip cream with sugar until stiff peaks form. Spread over the cheesecake and garnish with crushed candy canes before serving.
