Banana Zucchini Bread
Ingredients:
– 3 eggs
– 1 cup vegetable oil
– 1 cup white sugar
– 1 cup brown sugar
– 1 tablespoon vanilla extract
– 2 cups grated zucchini
– 1 cup mashed bananas
– 3 cups all-purpose flour
– 1 teaspoon baking powder
– 1 teaspoon baking soda
– 1 teaspoon ground cinnamon
– 1/2 teaspoon ground nutmeg
– 1/2 teaspoon salt
– 1/2 cup chopped walnuts optional
Directions:
1. Preheat the Oven: Preheat your oven to 325F 165C. Grease and flour two 9×5-inch loaf pans.
2. Mix Wet Ingredients: In a large bowl, beat the eggs, vegetable oil, white sugar, brown sugar, and vanilla extract until well combined. Stir in the grated zucchini and mashed bananas.
3. Combine Dry Ingredients: In a separate bowl, whisk together the flour, baking powder, baking soda, ground cinnamon, ground nutmeg, and salt.
4. Mix Together: Gradually add the dry ingredients to the wet ingredients, stirring until just combined. Fold in the chopped walnuts if using.
5. Bake: Divide the batter evenly between the two prepared loaf pans. Bake in the preheated oven for 60-70 minutes, or until a toothpick inserted into the center of the loaves comes out clean.
6. Cool and Serve: Allow the bread to cool in the pans for 10 minutes before transferring to a wire rack to cool completely. Slice and enjoy!
