Asian Orange Chicken
Ingredients:
– 1 cups water
– 2 tablespoons orange juice
– cup lemon juice
– cup rice vinegar
– 2 tablespoons soy sauce
– 1 tablespoon orange zest, grated
– 1 cup packed brown sugar
– teaspoon minced fresh ginger
– teaspoon minced garlic
– 2 tablespoons green onion, chopped
– teaspoon red pepper flakes
– 3 tablespoons cornstarch
– 2 tablespoons water
– 2 boneless, skinless chicken breasts, cut into bite-sized pieces
– teaspoon salt
– teaspoon pepper
– 1 cup all-purpose flour
– 1 egg, beaten
– cup vegetable oil for frying
Directions:
1. Prepare the Sauce: In a medium saucepan, combine 1 cups water, orange juice, lemon juice, rice vinegar, and soy sauce. Stir in orange zest, brown sugar, ginger, garlic, chopped green onion, and red pepper flakes. Bring the mixture to a boil over medium heat. Reduce the heat and simmer for about 15 minutes.
2. Thicken the Sauce: In a small bowl, mix 3 tablespoons cornstarch with 2 tablespoons water until smooth. Slowly stir this mixture into the sauce. Continue to simmer for another 5 minutes, stirring occasionally, until the sauce thickens. Set aside.
3. Prepare the Chicken: Season the bite-sized chicken pieces with salt and pepper. Dip each piece into the beaten egg, then coat with flour.
4. Fry the Chicken: Heat the vegetable oil in a large skillet over medium heat. Fry the coated chicken in batches, cooking until each piece is golden brown and crispy, about 5-7 minutes. Drain on paper towels.
5. Toss with Sauce: Once the chicken is fried, add it to the thickened orange sauce. Toss until the chicken is well-coated with the sauce.
6. Serve: Garnish with extra green onions or sesame seeds, if desired. Serve hot over steamed rice.
