Earthquake Cake II

Ingredients:

– 1 cup sweetened flaked coconut

– 1 cup chopped pecans

– 1 package 18.25 ounces German chocolate cake mix

– 1 package 8 ounces cream cheese, softened

– cup butter, melted

– 1 teaspoon vanilla extract

– 4 cups powdered sugar

– 1 cups water for cake mix

– cup vegetable oil for cake mix

– 3 large eggs for cake mix


Directions:

1. Preheat the Oven: Preheat your oven to 350F 175C. Grease a 9×13-inch baking pan.

2. Layer Coconut and Pecans: Spread the flaked coconut and chopped pecans evenly over the bottom of the prepared baking pan.

3. Prepare the Cake Batter: In a large bowl, prepare the German chocolate cake mix according to package instructions, using the water, oil, and eggs. Pour the cake batter over the coconut and pecans in the pan.

4. Make the Cream Cheese Mixture: In a separate bowl, beat together the softened cream cheese, melted butter, vanilla extract, and powdered sugar until smooth.

5. Swirl the Cream Cheese: Drop spoonfuls of the cream cheese mixture over the top of the cake batter. Use a knife to gently swirl the cream cheese mixture into the cake batter.

6. Bake: Bake the cake in the preheated oven for 45-50 minutes, or until the cake is set. The cake will have a cracked, “”earthquake”” appearance when done.
