True Maryland Crab Cakes

Ingredients:

– 1 pound fresh lump crabmeat, drained and picked over for shells

– 1 large egg

– 1 tablespoon mayonnaise

– 1 teaspoon Dijon mustard

– 1 teaspoon Worcestershire sauce

– 1 teaspoon Old Bay seasoning

– 1 tablespoon fresh lemon juice

– cup breadcrumbs preferably fresh

– 2 tablespoons unsalted butter for frying

– Lemon wedges for serving

– Optional garnish: chopped parsley

Directions:

1. Prepare the Crab Cake Mixture: In a medium bowl, whisk together the egg, mayonnaise, Dijon mustard, Worcestershire sauce, Old Bay seasoning, and lemon juice until smooth. Gently fold in the crabmeat and breadcrumbs, being careful not to break up the crab too much.

2. Shape the Crab Cakes: Form the mixture into 4 large crab cakes or 6 smaller ones, pressing them gently to hold together. Place the crab cakes on a plate and refrigerate for 30 minutes to help them firm up.

3. Cook the Crab Cakes: In a large skillet, melt the butter over medium heat. Fry the crab cakes for 4-5 minutes on each side, or until golden brown and crispy on the outside. Be careful when flipping to keep them intact.

4. Serve: Remove the crab cakes from the skillet and serve hot with lemon wedges and a sprinkle of chopped parsley, if desired. These crab cakes are perfect with a side of tartar sauce or a light salad.
