Seared Scallops
Ingredients:
– 1 pound large sea scallops
– 2 tablespoons olive oil
– Salt, to taste
– Black pepper, to taste
– 2 tablespoons unsalted butter
– 2 cloves garlic, minced
– 1 tablespoon fresh lemon juice
– Fresh parsley, chopped for garnish
– Lemon wedges for serving
Directions:
1. Prep the Scallops: Pat the scallops dry with paper towels. This is essential to achieving a nice sear. Season both sides of the scallops with salt and pepper.
2. Heat the Oil: In a large skillet, heat the olive oil over medium-high heat until shimmering. The oil should be hot enough so that the scallops sizzle upon contact.
3. Sear the Scallops: Place the scallops in the skillet, ensuring they are not crowded. Sear for 2-3 minutes on each side without moving them, until a golden crust forms. Avoid overcooking as scallops cook quickly.
4. Add Butter and Garlic: Once the scallops are seared on both sides, reduce the heat to medium. Add the butter and minced garlic to the skillet. Cook for an additional minute, basting the scallops with the garlic-infused butter.
5. Finish with Lemon Juice: Remove the skillet from the heat and drizzle the fresh lemon juice over the scallops. Gently toss to coat.
6. Serve: Transfer the scallops to a serving plate, garnish with freshly chopped parsley, and serve with lemon wedges on the side. Enjoy!
