Classic Cherry Cheesecake
Ingredients:
For the Crust:
1 cups 150 g graham cracker crumbs
cup 50 g granulated sugar
cup 115 g unsalted butter, melted
For the Cheesecake Filling:
2 packages 8 oz each cream cheese, softened
cup 150 g granulated sugar
2 large eggs
1 teaspoon vanilla extract
For the Topping:
1 can 21 oz cherry pie filling
Directions:
Prepare the Crust:
Preheat your oven to 350F 175C. In a medium bowl, combine the graham cracker crumbs, granulated sugar, and melted butter. Press the mixture firmly into the bottom of a 9-inch springform pan. Bake for 10 minutes, then remove from the oven and let it cool while preparing the filling.
Make the Cheesecake Filling:
In a large bowl, beat the softened cream cheese and sugar together until smooth and creamy. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract until fully combined.
Bake the Cheesecake:
Pour the cheesecake filling over the cooled crust, spreading it evenly. Bake in the preheated oven for 40 minutes, or until the center is set and slightly jiggly. Remove from the oven and let it cool at room temperature.
Chill and Add Topping:
Refrigerate the cheesecake for at least 4 hours, or overnight, to allow it to set completely. Once chilled, top the cheesecake with the cherry pie filling, spreading it evenly across the top.
