Lemon Loaf Cake
Ingredients:
For the Lemon Loaf:
– 1 cups 190 g all-purpose flour
– 1 teaspoon baking powder
– teaspoon salt
– 1 cup 200 g granulated sugar
– cup 115 g unsalted butter, softened
– 2 large eggs
– 1 tablespoon lemon zest from 1-2 lemons
– cup 60 mL fresh lemon juice
– cup 120 mL whole milk
– 1 teaspoon vanilla extract
For the Lemon Glaze:
– 1 cup 120 g powdered sugar
– 2 tablespoons fresh lemon juice
– 1 teaspoon lemon zest optional, for garnish
Directions:
1. Preheat the Oven:
Preheat your oven to 350F 175C. Grease and line a 9×5-inch loaf pan with parchment paper.
2. Mix Dry Ingredients:
In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
3. Cream Butter and Sugar:
In a large bowl, beat the softened butter and granulated sugar together until light and fluffy, about 2-3 minutes. Add the eggs one at a time, beating well after each addition. Mix in the lemon zest and lemon juice.
4. Combine Wet and Dry Ingredients:
Gradually add the flour mixture to the wet ingredients, alternating with the milk. Stir in the vanilla extract and mix until just combined.
5. Bake the Loaf:
Pour the batter into the prepared loaf pan and smooth the top. Bake for 45-50 minutes, or until a toothpick inserted into the center comes out clean. Let the cake cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
6. Make the Lemon Glaze:
In a small bowl, whisk together the powdered sugar and lemon juice until smooth. Adjust the consistency by adding more lemon juice if needed.
7. Glaze and Serve:
Once the loaf has cooled, drizzle the lemon glaze over the top. Garnish with additional lemon zest if desired. Slice and serve this tangy, sweet treat!
