Cheesy Chicken Enchiladas

Ingredients:

– 2 cups cooked, shredded chicken rotisserie or boiled

– 1 tablespoon olive oil

– 1 onion, finely chopped

– 2 cloves garlic, minced

– 1 can 14 oz enchilada sauce or homemade

– 1 can 14 oz diced tomatoes

– 1 teaspoon ground cumin

– 1 teaspoon chili powder

– Salt and pepper to taste

– 8 large flour tortillas

– 2 cups shredded Mexican cheese blend


– Fresh cilantro, chopped for garnish

Directions:

1. Preheat the Oven: Preheat your oven to 350F 175C. Grease a 9×13-inch baking dish with cooking spray or oil.

2. Cook the Filling: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and cook until softened, about 3 minutes. Add the minced garlic and cook for another 30 seconds. Stir in the shredded chicken, diced tomatoes, cumin, chili powder, salt, and pepper. Cook for 5 minutes to allow the flavors to meld.

3. Add Sauce: Stir in 1/2 cup of the enchilada sauce into the chicken mixture. Remove from heat and set aside.

4. Assemble the Enchiladas: Spread 1/2 cup of the enchilada sauce evenly over the bottom of the prepared baking dish. Lay out the tortillas and divide the chicken mixture evenly among them. Roll each tortilla up tightly and place seam-side down in the baking dish.

5. Top with Sauce and Cheese: Pour the remaining enchilada sauce over the top of the rolled tortillas. Sprinkle generously with the shredded cheese.

6. Bake: Cover the dish with foil and bake in the preheated oven for 20 minutes. Remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and slightly golden.
