Grandmas Herb-Crusted Stuffed Chicken Breast with Garlic Butter Sauce
Ingredients:
4 large boneless, skinless chicken breasts
1 cup spinach fresh or frozen, thawed
cup cream cheese, softened
1 cup shredded mozzarella cheese
2 tbsp fresh parsley, chopped
1 tbsp fresh basil, chopped
1 tbsp fresh thyme
Salt and pepper to taste
1 cup Italian breadcrumbs
cup grated Parmesan cheese
3 tbsp olive oil
Garlic Butter Sauce:
cup unsalted butter
4 cloves garlic, minced
1 tbsp lemon juice
2 tbsp fresh parsley, chopped
Instructions:
Prepare the Filling: In a bowl, mix together spinach, cream cheese, mozzarella, parsley, and basil until well combined. Add a pinch of salt and pepper to taste.
Prepare the Chicken: Carefully butterfly each chicken breast by slicing halfway through to create a pocket. Stuff each chicken breast with the spinach-cream cheese mixture and secure the edges with toothpicks.
Coat the Chicken: In a shallow dish, mix breadcrumbs, Parmesan cheese, thyme, and a pinch of salt and pepper. Brush the stuffed chicken breasts with olive oil and coat them in the breadcrumb mixture.
Bake: Preheat your oven to 375F 190C. Place the chicken on a baking sheet and bake for 25-30 minutes, or until the chicken reaches an internal temperature of 165F 74C.
Garlic Butter Sauce: While the chicken is baking, melt butter in a saucepan over medium heat. Add garlic and cook for about 2 minutes until fragrant. Stir in lemon juice and parsley. Remove from heat.
Serve: Drizzle the garlic butter sauce over the baked stuffed chicken breasts. Garnish with a sprinkle of fresh parsley and serve with mashed potatoes or roasted veggies.
