Sweet and Savory Maple-Glazed Pork Tenderloin
This tender pork tenderloin is marinated and baked to perfection, then topped with a sweet maple glaze with a hint of Dijon mustard. Perfect for a special family dinner!
Ingredients:
2 pork tenderloins about 1 pound each
1/4 cup soy sauce
2 tbsp Dijon mustard
2 tbsp olive oil
1/4 cup apple cider vinegar
2 tbsp fresh rosemary, chopped
1 tbsp garlic, minced
Salt and pepper to taste
For the Maple Glaze:
1/2 cup pure maple syrup
2 tbsp Dijon mustard
1 tbsp soy sauce
1 tsp apple cider vinegar
Fresh thyme for garnish
Instructions:
Marinate the Pork: In a small bowl, mix together soy sauce, Dijon mustard, olive oil, apple cider vinegar, rosemary, garlic, salt, and pepper. Place the pork tenderloins in a large resealable bag or dish and pour the marinade over them. Refrigerate for at least 2 hours, or overnight for best results.
Cook the Pork: Preheat the oven to 375F 190C. Place the marinated pork in a baking dish and roast for 25-30 minutes, or until the internal temperature reaches 145F 63C.
Make the Maple Glaze: While the pork is roasting, whisk together maple syrup, Dijon mustard, soy sauce, and apple cider vinegar in a small saucepan. Heat over medium heat until slightly thickened, about 5 minutes.
Glaze the Pork: Remove the pork from the oven and brush generously with the maple glaze. Return it to the oven for an additional 5-10 minutes until the glaze is caramelized and sticky.
Serve: Slice the pork and drizzle with any remaining glaze. Garnish with fresh thyme and serve with roasted vegetables or mashed potatoes.
