Pumpkin Coffee Cake Cookies
Ingredients:
For the Cookies:
– 1/2 cup unsalted butter, softened
– 1/2 cup granulated sugar
– 1/4 cup brown sugar, packed
– 1/2 cup pumpkin puree
– 1 large egg

For the Glaze:
– 1 cup powdered sugar
– 1-2 tablespoons milk
– 1/2 teaspoon vanilla extract
Directions:
1. Preheat the Oven: Preheat your oven to 350F 175C. Line a baking sheet with parchment paper or a silicone baking mat.
2. Make the Cookie Dough: In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy. Mix in the pumpkin puree, egg, and vanilla extract until fully combined.
3. Add Dry Ingredients: In a separate bowl, whisk together the flour, baking soda, baking powder, cinnamon, nutmeg, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until a soft dough forms.
4. Prepare the Crumb Topping: In a small bowl, combine the melted butter, brown sugar, flour, and cinnamon. Mix with a fork until crumbly.
