Pumpkin Pie Crumble Bars
Ingredients:
For the Crust & Crumble:
1 1/2 cups all-purpose flour
1/2 cup granulated sugar
1/2 cup light brown sugar, packed
1/2 teaspoon baking powder
1/2 teaspoon ground cinnamon
1/4 teaspoon salt
3/4 cup unsalted butter, cold and cubed
1 large egg
For the Pumpkin Filling:
1 can 15 ounces pumpkin puree
1/2 cup granulated sugar
1/4 cup light brown sugar, packed
1 1/2 teaspoons pumpkin pie spice
2 large eggs
1 teaspoon vanilla extract
1/2 cup evaporated milk
Directions:
Preheat the Oven: Preheat your oven to 350F 175C. Grease or line a 9×13-inch baking dish with parchment paper.
Make the Crust & Crumble: In a large bowl, combine the flour, granulated sugar, brown sugar, baking powder, cinnamon, and salt. Add the cold, cubed butter and use a pastry cutter or your fingers to work the butter into the dry ingredients until the mixture resembles coarse crumbs. Stir in the egg. Press half of the mixture evenly into the bottom of the prepared baking dish to form the crust. Set the remaining mixture aside for the crumble topping.
Make the Pumpkin Filling: In a medium bowl, whisk together the pumpkin puree, granulated sugar, brown sugar, pumpkin pie spice, eggs, vanilla extract, and evaporated milk until smooth and well combined.
Assemble the Bars: Pour the pumpkin filling over the prepared crust, spreading it evenly. Sprinkle the reserved crumble mixture over the top of the pumpkin filling.
Bake: Bake for 35-40 minutes, or until the top is golden brown and the pumpkin filling is set. Allow the bars to cool completely in the pan before cutting.
