Heavenly Banana Cake with Cream Cheese Frosting

Ingredients:

For the Banana Cake:

– 1 cups mashed ripe bananas about 3 medium bananas

– 2 teaspoons lemon juice

– 3 cups all-purpose flour

– 1 teaspoons baking soda

For the Cream Cheese Frosting:

– 8 oz cream cheese, softened

– cup unsalted butter, softened

– 1 teaspoon vanilla extract


– 3 cups powdered sugar

– 1 tablespoon milk optional, for desired consistency

Directions:

1. Preheat the Oven: Preheat your oven to 275F 135C. Grease and flour a 9×13-inch baking pan.

2. Prepare the Bananas: In a small bowl, mix the mashed bananas with the lemon juice and set aside.

3. Combine Dry Ingredients: In another bowl, whisk together the flour, baking soda, and salt. Set aside.

4. Cream Butter and Sugar: In a large bowl, cream the softened butter and granulated sugar until light and fluffy. Add eggs one at a time, beating well after each addition. Stir in vanilla extract.

5. Alternate Wet and Dry: Gradually add the flour mixture to the butter mixture, alternating with the buttermilk. Begin and end with the flour mixture, mixing just until combined.

6. Add Bananas: Gently fold in the mashed banana mixture until well incorporated.

7. Bake: Pour the batter into the prepared pan and bake for about 1 hour or until a toothpick inserted into the center comes out clean. Let the cake cool completely in the pan.

8. Make the Frosting: While the cake cools, beat the softened cream cheese and butter together until smooth. Add the vanilla extract and gradually mix in the powdered sugar until creamy. If needed, add 1 tablespoon of milk to adjust the frostings consistency.

9. Frost the Cake: Once the cake has cooled completely, spread the cream cheese frosting evenly over the top. Slice and enjoy!
