Pineapple Heaven Cheesecake
Ingredients:
– 2 cups graham cracker crumbs
– 1/2 cup unsalted butter, melted
– 2 cups cream cheese, softened
– 1 cup granulated sugar
– 2 cups heavy cream
– 2 cups pineapple chunks
– 1 cup pineapple juice
– 1/4 cup powdered sugar
– 2 tbsp cornstarch
– 1 tsp vanilla extract
– 1 packet gelatin
Directions:
1. Preheat the oven to 350F 175C and prepare a graham cracker crust in a 9-inch pan.
2. Beat cream cheese with sugar, then fold in whipped heavy cream.
3. Make a pineapple sauce by thickening juice with powdered sugar, cornstarch, and gelatin.
4. Combine the pineapple sauce with the cream cheese mixture and pour it over the crust.
5. Chill for 4 hours and garnish with pineapple chunks before serving.
