Chocolate Chip Cookie Ice Cream Cake

Ingredients:

Crust:

– 2 cups chocolate chip cookie crumbs about 20 cookies

– 6 tablespoons unsalted butter, melted

Ice Cream Layer:

– 1.5 quarts vanilla ice cream, softened

– 1 cups chocolate chip cookies, chopped about 10 cookies

Whipped Cream:

– 2 cups heavy whipping cream

– cup powdered sugar

– 1 tsp vanilla extract

Toppings:


– Chocolate sauce

– Extra chocolate chip cookies whole or crushed, for garnish

Directions:

1. Prepare the crust: Line the bottom of a 9-inch springform pan with parchment paper. In a medium bowl, combine the chocolate chip cookie crumbs and melted butter. Press the mixture firmly into the bottom of the pan to form the crust. Freeze for 10-15 minutes to set.

2. Add the ice cream layer: In a large bowl, mix the softened vanilla ice cream with the chopped chocolate chip cookies. Spread the ice cream mixture evenly over the crust. Smooth the top and freeze for 4-6 hours, or until firm.

3. Make the whipped cream: In a large bowl, whip the heavy cream, powdered sugar, and vanilla extract on high speed until stiff peaks form.

4. Assemble the cake: Once the ice cream layer is frozen, remove the cake from the freezer and spread a thick layer of whipped cream on top. Smooth the surface evenly.

5. Decorate: Drizzle the top with chocolate sauce and garnish with whole or crushed chocolate chip cookies. Return the cake to the freezer for at least 30 minutes before serving to ensure everything is set.

6. Serve: Remove the cake from the springform pan, slice, and enjoy this refreshing and indulgent dessert!
