Easy Orange Zucchini Cake
This moist and flavorful cake combines the freshness of zucchini with zesty orange, topped with a sweet orange glaze. A perfect treat for any occasion!
Ingredients:
For the Cake:
1 cups all-purpose flour
1 teaspoon baking powder
teaspoon baking soda
teaspoon salt
cup unsalted butter, softened
1 cup granulated sugar
2 large eggs
1 teaspoon vanilla extract
1 cup grated zucchini
1 tablespoon orange zest
cup freshly squeezed orange juice
cup sour cream
For the Orange Glaze:
1 cup powdered sugar
2 tablespoons freshly squeezed orange juice
1 tablespoon orange zest for garnish
Directions:
Preheat Oven:
Preheat your oven to 350F 175C and grease a 9×5-inch loaf pan.
Prepare Dry Ingredients:
In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.
Cream Butter and Sugar:
In a large bowl, beat the softened butter and granulated sugar together until light and fluffy. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
Combine Mixtures:
Gradually add the dry ingredients to the wet mixture, mixing just until combined. Fold in the grated zucchini, orange zest, orange juice, and sour cream until evenly distributed.
Bake:
Pour the batter into the prepared loaf pan and smooth the top with a spatula. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
Cool the Cake:
Allow the cake to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
Prepare the Glaze:
In a small bowl, whisk together the powdered sugar and orange juice until smooth. Drizzle the glaze over the cooled cake and sprinkle with additional orange zest for garnish.
