Moist and Spiced Applesauce Cake
Ingredients:
1 cups unsweetened applesauce
cup granulated sugar
cup packed light brown sugar
cup vegetable oil
2 large eggs
1 teaspoon vanilla extract
2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon ground cinnamon
teaspoon ground nutmeg
teaspoon ground cloves
teaspoon salt
cup chopped walnuts optional
cup raisins optional
Powdered sugar for dusting optional
Directions:
Preheat the Oven: Preheat your oven to 350F 175C. Grease a 9×9-inch baking pan or line it with parchment paper for easy removal.
Mix Wet Ingredients: In a large mixing bowl, combine the applesauce, granulated sugar, brown sugar, vegetable oil, eggs, and vanilla extract. Whisk until well blended and smooth.
Combine Dry Ingredients: In a separate bowl, whisk together the flour, baking soda, baking powder, cinnamon, nutmeg, cloves, and salt.
Combine Wet and Dry Ingredients: Gradually add the dry ingredients to the wet ingredients, stirring until just combined. Be careful not to overmix. Fold in the chopped walnuts and raisins if using.
Bake: Pour the batter into the prepared baking pan and spread it evenly. Bake in the preheated oven for 35-40 minutes, or until a toothpick inserted into the center comes out clean.
Cool: Allow the cake to cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
Serve: Dust with powdered sugar before serving, if desired. Slice and enjoy this deliciously spiced applesauce cake!
