Strawberry Heaven on Earth Cake for Halloween
Ingredients:
For the Strawberry Cake:
1 box 15.25 oz strawberry cake mix
3 large eggs
1 cup water
1/2 cup vegetable oil
1 cup fresh strawberries, pureed
For the Whipped Topping:
1 cup heavy whipping cream
1/2 cup powdered sugar
1 teaspoon vanilla extract
For the Filling:
2 cups fresh strawberries, sliced
1 cup strawberry jam
1 tablespoon lemon juice
For Decoration:
Halloween-themed sprinkles or edible glitter
Chocolate shavings or crumbled Oreos for a “”dirt”” effect
Gummy worms or candy eyeballs optional
Instructions:
Prepare the Strawberry Cake:
Preheat your oven to 350F 175C.
Grease and flour two 9-inch round cake pans.
In a large mixing bowl, combine the strawberry cake mix, eggs, water, vegetable oil, and pureed strawberries. Mix until well combined.
Divide the batter evenly between the prepared cake pans.
Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean. Let the cakes cool in the pans for 10 minutes, then transfer to a wire rack to cool completely.
Make the Whipped Topping:
In a mixing bowl, whip the heavy cream with an electric mixer until soft peaks form. Gradually add the powdered sugar and vanilla extract, continuing to whip until stiff peaks form. Set aside.
Prepare the Filling:
In a bowl, mix the sliced strawberries with the strawberry jam and lemon juice. Stir until well combined.
Assemble the Cake:
Place one layer of the cooled strawberry cake on a serving plate. Spread half of the strawberry filling over the top.
Add a layer of whipped topping over the strawberries.
Place the second cake layer on top and repeat the process with the remaining strawberry filling and whipped topping.
Decorate:
Spread the remaining whipped topping over the entire cake.
Sprinkle with Halloween-themed sprinkles or edible glitter.
For a spooky touch, add chocolate shavings or crumbled Oreos around the base for a dirt effect.
Top with gummy worms or candy eyeballs if desired.
Chill and Serve:
Refrigerate the cake for at least 1 hour before serving to allow the flavors to meld and the whipped topping to set.
