Amish White Bread
Ingredients:
2 cups warm water 110F/45C
2/3 cup white sugar
1 1/2 tablespoons active dry yeast
1 1/2 teaspoons salt
1/4 cup vegetable oil
6 cups bread flour
Directions:
Activate the Yeast: In a large bowl, dissolve the sugar in the warm water. Then, stir in the active dry yeast. Let the mixture sit for about 5-10 minutes until the yeast becomes foamy and activates.
Add Oil and Salt: Once the yeast is activated, add the vegetable oil and salt to the mixture, stirring to combine.
Incorporate the Flour: Gradually add the bread flour, one cup at a time, mixing thoroughly after each addition. Continue mixing until the dough comes together and becomes smooth.
Knead the Dough: Transfer the dough onto a lightly floured surface. Knead the dough for about 8-10 minutes until its smooth and elastic.
First Rise: Place the dough in a large, lightly oiled bowl. Cover it with a clean cloth and let it rise in a warm place for about 1 hour, or until it has doubled in size.
Shape the Loaves: Punch down the dough to release any air. Divide the dough into two equal portions and shape each into a loaf. Place each loaf into a greased 9×5 inch loaf pan.
Second Rise: Cover the pans with a cloth and allow the dough to rise again for about 30 minutes, or until the dough has risen about 1 inch above the pans.
Bake the Bread: Preheat your oven to 350F 175C. Bake the loaves for 30 minutes or until the tops are golden brown, and the bread sounds hollow when tapped.
Cool and Serve: Remove the bread from the pans and let it cool on a wire rack. Slice and serve as desired.
