Easy Chocolate Fudge Cake
Ingredients:
For the Cake:
– 1 1/2 cups all-purpose flour
– 1/4 cup cocoa powder unsweetened
– 1 teaspoon baking powder
– 1 teaspoon baking soda
– 1/4 teaspoon salt
– 1 cup granulated sugar
– 1/2 cup brown sugar, packed
– 1/2 cup unsalted butter, melted
– 2 large eggs
– 1 teaspoon vanilla extract
– 1 cup buttermilk
– 1/2 cup boiling water
– 1/2 cup semi-sweet chocolate chips optional
For the Chocolate Frosting:
– 1/2 cup unsalted butter, softened
– 1/2 cup cocoa powder unsweetened
– 2 cups powdered sugar
– 1/4 cup milk
– 1 teaspoon vanilla extract
Directions:
1. Preheat the Oven: Preheat your oven to 350F 175C. Grease and line two 8-inch round cake pans with parchment paper.
2. Make the Cake Batter: In a large bowl, sift together the flour, cocoa powder, baking powder, baking soda, and salt. Add the granulated sugar and brown sugar, and mix well.
3. Combine Wet Ingredients: In a separate bowl, whisk together the melted butter, eggs, vanilla extract, and buttermilk. Gradually pour the wet ingredients into the dry ingredients, mixing until combined.
4. Add the Boiling Water: Slowly add the boiling water to the batter and stir until smooth. The batter will be thin. If desired, fold in the semi-sweet chocolate chips for extra richness.
5. Bake the Cakes: Divide the batter evenly between the prepared cake pans. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean. Let the cakes cool in the pans for 10 minutes before transferring them to a wire rack to cool completely.
6. Make the Chocolate Frosting: In a medium bowl, beat the softened butter until smooth. Add the cocoa powder and powdered sugar, alternating with the milk, and mix until light and fluffy. Stir in the vanilla extract.
7. Assemble the Cake: Once the cakes are completely cool, frost the top of one cake layer. Place the second layer on top and frost the entire cake, covering the sides evenly.
8. Serve: Slice and enjoy this rich, fudgy chocolate cake with a decadent frosting!
