Red Hot Cinnamon Hard Candy
An Old-Fashioned Spicy Cinnamon Candy for the Holidays
Ingredients:
Butter for greasing
4 cups granulated sugar
1 cup light corn syrup
1 cup purified water
1 teaspoon red food coloring optional
1 teaspoon cinnamon candy oil
1 cup powdered sugar
Directions:
Prepare the Pan: Grease a 15″”x10″” sheet pan thoroughly and line it with buttered parchment paper to prevent sticking.
Boil the Mixture: In a large, heavy-bottomed saucepan, combine the granulated sugar, light corn syrup, water, and red food coloring if using. Place the saucepan over medium-high heat and stir until the sugar dissolves. Allow the mixture to come to a boil, then reduce the heat to medium and let it simmer for about 3 minutes.
Heat to 300F: Clip a candy thermometer to the side of the pan, ensuring the tip doesnt touch the bottom. Continue heating the sugar mixture until it reaches the hard crack stage 300F/150C. This will ensure the candy sets properly.
Add Cinnamon Flavoring: Once the mixture hits 300F, remove the pan from the heat immediately. Stir in the cinnamon candy oil carefully it can be strong and release fumes, making sure its fully incorporated.
Set the Candy: Pour the hot mixture evenly into the prepared sheet pan. Be cautious as the mixture will be extremely hot. Let the candy cool completely at room temperature for 1.5 to 2.5 hours.
Break and Finish: Once the candy has cooled and hardened, dust the surface with powdered sugar to prevent sticking. Use a hammer, or the back of a heavy knife, to break the candy into bite-sized pieces.
