White Chicken Chili Ingredients: 3 cooked

White Chicken Chili

Ingredients:

3 cooked and chopped chicken breasts, or 2 large cans of white chicken I used canned

2 cans cream of chicken soup

2 cans navy or cannellini beans I prefer cannellini for better flavor

1 10 oz can of mild Rotel tomatoes

2 cans shoepeg corn if unavailable, I used 1 large can of white and yellow sweet corn

16 ounces Velveeta cheese

2 soup cans of water

Instructions:

Prepare the Ingredients:

Drain the water from the beans and add them to a large pot or Dutch oven. Drain the chicken and add it as well.

Combine the Mixture:

Add the drained corn, cream of chicken soup, the 2 cans of water, and the tomatoes. Stir to combine.

Melt the Cheese:

Chop the Velveeta cheese and add it to the pot. Keep the heat low and stir frequently to prevent scorching on the bottom until the cheese is melted and the mixture is heated through.

Serve:

Serve the chili over crushed tortilla chips for a delicious finish!

Enjoy your easy and tasty white chicken chili!
