Merry Christmas Jam
A festive blend of strawberries, cranberries, and warm spicesperfect for spreading holiday cheer!
Ingredients:
2 cups strawberries, hulled and chopped
2 cups cranberries fresh or frozen
4 cups granulated sugar
1/2 cup orange juice
1/4 cup water
1 tbsp grated orange zest
1/2 tsp ground cinnamon
1/4 tsp ground cloves
1 1.75 oz package fruit pectin
Directions:
1 Prepare the Fruit:
In a large pot, combine the chopped strawberries, cranberries, orange juice, and water. Bring the mixture to a boil over medium-high heat, stirring occasionally. Reduce the heat and let it simmer for about 10 minutes, or until the cranberries burst and the mixture softens.
2 Add the Pectin:
Stir in the fruit pectin and bring the mixture to a full rolling boil one that doesnt stop bubbling when stirred. Boil for 1 minute, stirring constantly.
3 Add Sugar and Spices:
Gradually stir in the sugar until it dissolves. Add the orange zest, cinnamon, and cloves. Return the mixture to a rolling boil and cook for another minute, stirring constantly. Remove from heat.
4 Fill the Jars:
Skim off any foam on the surface, then ladle the hot jam into sterilized jars, leaving 1/4-inch headspace. Wipe the rims clean, apply lids, and screw the rings on just until finger-tight.
5 Process in a Water Bath:
Place the jars in a boiling water bath and process for 10 minutes. Remove the jars and allow them to cool completely. Check the seals after 24 hours.
