Herb Roasted Turkey
Ingredients:
1 whole turkey 12-14 pounds, thawed
1/2 cup unsalted butter, softened
1 tablespoon olive oil
2 teaspoons salt
1 teaspoon black pepper
2 teaspoons garlic powder
2 teaspoons onion powder
1 tablespoon fresh rosemary, chopped
1 tablespoon fresh thyme, chopped
1 tablespoon fresh sage, chopped
1 lemon, quartered
1 onion, quartered
1 head of garlic, halved
1 cup chicken broth
1/2 cup white wine optional
Directions:
Preheat the Oven: Preheat your oven to 350F 175C. Remove the neck and giblets from the turkey, and pat the turkey dry with paper towels.
Prepare Herb Butter: In a small bowl, mix the softened butter with the olive oil, salt, pepper, garlic powder, onion powder, rosemary, thyme, and sage. Stir until the herb butter is well combined.
Season the Turkey: Rub the herb butter all over the turkey, both on the outside and under the skin. Make sure to coat the breast, legs, and thighs well. Season the inside cavity of the turkey with salt and pepper.
Stuff the Turkey: Stuff the cavity with the quartered lemon, onion, and garlic.
Roast the Turkey: Place the turkey in a roasting pan, breast-side up, on a rack. Pour the chicken broth and white wine if using into the bottom of the pan to help keep the turkey moist during roasting. Cover the turkey loosely with foil.
Roast and Baste: Roast the turkey for 2 1/2 to 3 1/2 hours, depending on the size, until a meat thermometer inserted into the thickest part of the thigh reads 165F 74C. Remove the foil during the last 45 minutes of cooking to allow the skin to brown. Baste the turkey every 30-45 minutes with the pan juices.
Rest the Turkey: Once cooked, remove the turkey from the oven and let it rest for 20-30 minutes before carving. This will allow the juices to redistribute throughout the meat.
Serve: Carve the turkey and serve with the pan juices or your favorite gravy. Enjoy your beautifully roasted turkey with family and friends!
