Classic Chicken and Dumplings
Ingredients:
1 tablespoon olive oil
1 pound boneless, skinless chicken breasts, diced
Salt and pepper, to taste
1 small onion, diced
3 medium carrots, diced
2 celery stalks, diced
3 cloves garlic, minced
6 cups chicken broth
1 teaspoon dried thyme
1 teaspoon dried parsley
1 cup heavy cream
1 cup frozen peas
For the Dumplings:
1 cup all-purpose flour
1 tablespoon baking powder
teaspoon salt
cup milk
2 tablespoons butter, melted
Directions:
Cook the Chicken: In a large pot, heat olive oil over medium heat. Season the chicken with salt and pepper, then cook until browned. Remove the chicken from the pot and set aside.
Sauté Vegetables: Add the onion, carrots, and celery to the pot and cook for 5 minutes until softened. Add the garlic and cook for an additional minute.
Add Broth and Seasonings: Pour in the chicken broth, then add the thyme and parsley. Return the cooked chicken to the pot and bring the mixture to a simmer.
Make the Dumplings: In a bowl, whisk together flour, baking powder, and salt. Stir in the milk and melted butter until just combined to form a sticky dough.
Add Cream and Peas: Stir in the heavy cream and frozen peas. Drop spoonfuls of the dumpling dough onto the surface of the simmering soup.
Cook the Dumplings: Cover the pot and let the dumplings cook for 15 minutes, or until they are fluffy and cooked through.
Serve: Ladle the chicken and dumplings into bowls, serve hot, and enjoy this comforting classic!
