Chicken Cordon Bleu Soup
This comforting, creamy soup brings all the flavors of classic Chicken Cordon Bleu in a bowl!
Ingredients:
2 tablespoons butter
1 small onion, diced
2 garlic cloves, minced
3 cups chicken broth
2 cups cooked chicken, shredded
1 cup ham, diced
1 1/2 cups Swiss cheese, shredded
1 cup heavy cream
1/4 cup all-purpose flour
1/4 cup milk
1 teaspoon Dijon mustard
1/4 teaspoon black pepper
Salt, to taste
Fresh parsley, chopped, for garnish
Instructions:
Sauté the Aromatics: In a large pot, melt the butter over medium heat. Add the diced onion and minced garlic, sautéing for 3-4 minutes until soft and fragrant.
Make the Roux: Stir in the flour, cooking for 1 minute to form a roux.
Add Broth and Meat: Gradually whisk in the chicken broth until smooth. Add the shredded chicken, diced ham, and Dijon mustard. Bring to a simmer and let the flavors meld for about 10 minutes.
Add Cream and Milk: Slowly stir in the heavy cream and milk, cooking for an additional 5 minutes until the soup is creamy and smooth.
Incorporate the Cheese: Gradually add the shredded Swiss cheese, stirring continuously until melted. Season with black pepper and salt to taste.
Serve: Once the soup reaches your desired thickness, remove from heat, garnish with chopped parsley, and serve hot.
